Most cabinet material advice is written for a national audience and quietly assumes a stable indoor climate. The Central Valley does not offer one. Clovis runs summer highs averaging 98 to 100 degrees through July and August, the region reached 114 degrees in July 2021, and then fog season brings weeks of damp valley mornings. Wood moves through that cycle every single year.
What the annual swing actually does
Wood is hygroscopic: it takes on and gives off moisture with the air around it, and it expands and contracts across the grain as it does. In a climate with stable humidity that movement is small. Here it is not.
The visible symptoms of ignoring it are specific. A solid wood door panel that was glued fixed rather than allowed to float will open a hairline gap at the edge, or in the worse case split. A painted panel shows a witness line where the paint cracks along the joint. Joints work loose. Doors that closed perfectly in February bind in August.
The carcass: plywood over particleboard, decisively
Plywood is cross laminated, meaning alternating plies run at right angles and physically restrain each other from moving. Particleboard is compressed wood fibre with no such structure.
Once moisture reaches a particleboard core the fibres swell, and critically that swelling does not reverse when it dries. The panel is permanently a different shape. In a climate that cycles between very dry and very damp every year, that is a slow structural failure rather than a cosmetic one. Full detail in our plywood versus particleboard guide.
Doors: MDF panels for painted work
This one surprises people, because MDF sounds like the cheap option. For painted cabinetry it is genuinely the better engineering choice.
A solid wood panel in a painted five piece door moves seasonally. When it contracts, it exposes a thin line of unpainted wood at the panel edge, because the paint was applied when the panel was sitting further out. That line is called a witness line and it is the single most common complaint about painted wood cabinetry in swing climates. MDF does not move that way, so the joint stays closed year round.
For stained and natural wood doors, solid hardwood is still the right material, because the grain is the entire point. The answer there is construction: the panel must float in its groove rather than be glued fixed, so it can move without stressing the frame.
Ask any bidder one question: are the solid panels floating or glued? A floating panel is standard practice and costs nothing extra. A glued panel is a shortcut that will show itself in about eighteen months here.

Finishes: catalysed, and sealed on all six sides
Two finish decisions matter more here than elsewhere.
Seal every face. A door finished on the front and back but not on the top and bottom edges absorbs moisture through those raw edges. It swells, and it stops clearing its frame. Bathroom and laundry doors fail from the hidden bottom edge upward, and it is entirely preventable.
Specify catalysed finishes in wet rooms. Groundwater across the Fresno area carries heavy dissolved mineral content, which is why scale builds so quickly on local fixtures and shower glass. That same mineral laden water drying repeatedly on a cabinet face leaves deposits that dull and eventually etch a soft coating. Catalysed or conversion finishes resist it far better than standard latex enamel.
Where the finish is applied matters too
Cabinet coatings are sensitive to temperature and humidity while they cure. Spraying in a garage in August, at ambient temperatures near or above 100 degrees, flashes solvent out of the film too fast and leaves it brittle and prone to early chipping. Spraying on a December tule fog morning can cloud the film on some products.
This is the practical reason doors should be finished in a controlled shop rather than on site, and it matters more in Kerman, Madera, and the surrounding farmland where airborne agricultural dust settles into a wet finish permanently.
The short version
Plywood boxes, MDF panels on painted doors, floating solid panels on stained doors, catalysed finishes in wet rooms, all six sides sealed, and no thermofoil anywhere near heat. That specification costs slightly more up front and removes most of the failure modes this climate produces.

Hardware, which nobody thinks of as a material
Hinges and glides are the parts you touch every day, and they are where a cheap kitchen announces itself fastest.
Concealed soft close hinges adjust in six directions, which matters in a climate where doors move seasonally. When wood expands slightly in fog season, a six way adjustable hinge lets an installer bring the reveal back to square rather than telling you it is normal. Older or cheaper hinges lose their ability to hold an adjustment, and once that happens the door drifts back out of alignment within weeks of every correction.
Full extension undermount glides rated to 100 pounds do two things. They bring the whole drawer clear of the cabinet, which roughly doubles the usable volume of a base cabinet compared with a door bay. And they carry real weight, which matters when a base drawer holds cast iron rather than plastic containers.
Both are frequently quoted as upgrades. On any quote you receive, ask whether they are standard, because it is one of the clearest indicators of where a shop sits.
The compliance question worth asking
Composite wood products sold in California must meet the California Air Resources Board Phase 2 formaldehyde standard, which is enforced federally under TSCA Title VI. This is not a premium feature; it is the law.
The useful part is what asking reveals. Any legitimate supplier knows the compliance status of their panel stock immediately and can put it on a quote. A bidder who cannot answer, or who treats it as an unusual question, is telling you something about their supply chain.
It matters practically as well as legally. Formaldehyde off gassing is highest when new, and cabinetry is a large area of composite panel installed in the room where your household spends the most time.
